My baking experiment #29 – S’mores Brownies

My bf was craving s’mores, so we bought a bag of mini marshmallows. That got me thinking: what else can i make with these besides s’mores? I was going to bake some brownies today, so i decided to make them s’mores brownies:

For the graham crust
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 1 cup graham cracker crumbs
For the brownies
  • 10 tablespoons (1¼ sticks) unsalted butter
  • 1¼ cups granulated sugar
  • ¾ cups plus 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 cup milk chocolate chips
  • 1½ cups mini marshmallows
  1. Preheat oven to 325°F. Line an 8-by-8-inch baking pan with aluminum foil, leaving overhang on the sides. Spray with nonstick cooking spray; set pan aside.
  2. In a bowl, combine melted butter and graham cracker crumbs. Press into prepared pan. Set aside.
  3. In a large microwave-safe bowl, combine butter, sugar, cocoa & salt, and heat on high power to melt, about 45 seconds. Stop to stir, and heat in 10-second bursts until mixture has melted and can be stirred smooth. Batter will be very granular.
  4. Add the vanilla & eggs, and stir vigorously until batter is thick & shiny. Add the flour and stir until you cannot see it any longer. Fold in the chocolate chips. Pour half the batter into the prepared pan and spread evenly.
  5. Sprinkle 1/2 cup of the marshmallows all over the batter. Spread the remaining batter carefully over the marshmallow.
  6. Bake for around 25 minutes until a toothpick in the center emerges slightly moist with batter. Increase oven temperature to 375°F. Top with remaining marshmallows and bake for another 3-5 minutes until marshmallows are lightly browned. Sprinkle graham cracker crumbs on top if desired.
  7. Cool brownies completely before cutting into 16 equal squares with a very sharp knife.
  8. Brownies will keep in an airtight container at room temperature or in the refrigerator for up to a week.

You can never go wrong with brownies. While they are baking in the oven, the smell is incredible. And when they just come out of the even, all the gooey chocolatey goodness is unbelievable. The taste is incredible. The graham cracker crust enhances the chocolate flavor of the brownies. And the melted marshmallows on top give them an extra texture, and this becomes a total chocolate indulgence. I never wanna stop eating this. So good.
