orange cheesecake minis

My favorite dessert is cheesecake, especially those super decadent ones from the Cheesecake Factory. Last year i baked a beautiful new-york cheesecake with sour cream topping, as well as mini Nutella-swirl & peanut butter cheesecakes. Since it’s summertime and super hot here in Texas, I decided to make no-bake cheesecake:


4 graham crackers, crushed
2 tbsp butter, melted
1 block (8Β oz) cream cheese, softened
1/4 cup granulated sugar
3 Tbsp orange flavored gelatin
1/2 cup (4 oz) frozen whipped topping, thawed


Line muffin tin with 6 muffin cups. Combine graham cracker crumbs with melted butter and press into muffin cups. Refrigerate. Place the cream cheese and sugar in a large mixing bowl. Mix well with an electric mixer. Add gelatin and mix well. Add the whipped topping and mix until well combined. Spread the mixture into the muffin cups. Refrigerate for at least 4 hours before serving.

These mini cheesecakes sure were delicious! Smooth & creamy, they tasted just like regular cheesecakes! This is the perfectΒ cool & refreshing dessert for a warm summer evening. πŸ™‚
