1 cup all-purpose flour
1/2 tablespoon baking powder
1/4 teaspoon salt
1 large egg
1/4 cup milk
1/4 cup orange juice
1/4 cup sugar
1/8 cup vegetable oil
3/4 cup blueberries
Heat oven to 400 degrees F. Line 6 standard-size muffin cups.
In large bowl, whisk flour, baking powder, and salt. In medium bowl, whisk egg, milk, juice, sugar, and oil; stir in 1/2 of the berries. Make a well in flour mixture; pour in egg mixture. Stir until dry ingredients are just moistened.
Spoon 1/4 cup batter into each muffin cup. Sprinkle remaining berries on top. Bake in preheated oven for 18-20 minutes until toothpick comes out clean.
Cool pan on wire rack for 5 minutes. Remove muffins from pan; cool completely on wire rack. Enjoy!
The blueberry muffins came out moist & tender, super yummy! The muffin tops rose to a dome shape, kinda like those in a bakery. I topped the muffins with a simple orange-marmalade frosting made with mini marshmallows. This gives the muffins a sweeter taste with a more prominent orange flavor. Orange & blueberries go great together!
