My baking experiment #47 – strawberry shortcakes

Yesterday i made some savory scones. Today i decided to make some sweet scones, or shortcakes. I’m not sure what the difference is, but i know i love strawberry shortcakes:

1 cup all-purpose flour
1 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons cold butter, cut into small pieces
1/4 cup milk
1 large egg
2 tablespoons sugar

3 cups strawberries, hulled and sliced
2 tablespoons sugar
1 tablespoon orange juice

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

Shortcakes: Combine flour, baking powder, and salt in a large bowl. Add butter and work it into flour mixture with fingers until it resembles coarse meal.Β Whisk together milk, egg and sugar in a small bowl. Add to flour mixture and lightly mix until dough just comes together. Do not over mix. Turn dough out onto a lightly floured surface. With lightly floured hands, divide dough into 5 equal-sized balls and space them evenly on prepared baking sheet. Bake until golden brown, about 12 to 15 minutes.

Filling: Combine strawberries, sugar and juice in a large bowl. Let stand until sugar is dissolved and mixture is syrupy, about 15 minutes.

Split the shortcakes. Place bottom halves of shortcakes on plates and top evenly with strawberry mixture and whipped cream or yogurt. Cover with tops of shortcakes. Dust with powdered sugar if desired. Enjoy!

The shortcakes are super yummy! The cakes are slightly sweet and goes perfect with the juicy strawberries. These are the perfect summer dessert!
