My baking experiment #51 – french yogurt cake

I was gonna bake some cupcakes today but ran out of milk. So i decided to bake something without milk: a French yogurt cake, or gâteau au yaourt. It’s a simple cake that has a texture somewhere between muffin and pound cake. The French measure out the ingredients using a yogurt jar, hence its name.

Ingredients

  • cup yogurt
  • 1/3 cup oil
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 2 Tbsp orange juice
  • cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt

Instructions

  1. Heat oven to 350°F. Lightly grease a 9-inch springform pan or loaf pan.
  2. Whisk together yogurt, sugar, oil, eggs, vanilla, and juice. Add flour, baking powder, soda, and salt and stir till there are no more lumps. Be careful not to overstir or you will end up with a tough cake.
  3. Pour batter into prepared pan and bake for 30-40 minutes. Let cake cool before removing from pan.
  4. Serve cake with some fresh fruit and crème fraîche or jam. It will keep for a few days.

The cake is really good: soft & tender, not very dense like a pound cake. Light enough for breakfast with a cup of coffee, also great with afternoon tea or as a dessert in the evening. Not too sweet so it goes well with anything you put on it. Such a versatile and everyday cake!
