I just found out that today (Aug 24) is national peach pie day. The weather is still hot out and i happen to have some beautiful ripe peaches sitting on my counter, so i decided to make a no-bake peaches & cream pie:
- 18 vanilla sandwich cookies
- 4 Tbsp butter, melted
- 2 peaches
- 1/4 tsp cinnamon
- 1 cup vanilla yogurt
- 1/2 cup orange juice
- 1 package vanilla pudding mix
- 1 cup cool whip
Smash cookies in ziploc bag. Stir in melted butter until combined. Press into 9-inch pie dish and up the sides.
Chop up one peach and mix with cinnamon.
Whisk together yogurt and oj with pudding mix (just the powder) for 2 minutes. Fold in cool whip until combined.
Fold in peaches until just combined. Pour into pie pan and spread evenly. Freeze for two hours until firm.
Thaw in fridge 30 minutes before serving. Garnish with slices of second peach.
OMG this pie is super yummy! It tastes like a peachy orange creamsicle cheesecake pie! It’s so refreshing for a hot summer evening. It’s just like eating ice-cream! I love it 🙂
