My baking experiment #67 – crazy chocolate cake

I came across this recipe online for a no-bowl, no mess no fuss, easy chocolate cake. It’s called a wacky (crazy) cake because it contains no milk, butter or eggs. Dates back to the great depression when those items were scarce. People were resourceful back then:

  • 1 1/2 cups flour
  • 3 Tbsp cocoa
  • 1/4 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 5 Tbsp vegetable oil
  • 1 cup water

Preheat oven to 350 degrees F.

Mix first 5 dry ingredients in a greased 8″ square baking pan.  Make 3 depressions in dry ingredients – two small, one larger. Pour vinegar in one depression, vanilla in the other and the vegetable oil in third larger depression.  Pour water over all.  Mix well until smooth.

Bake on middle rack of oven for 35 minutes.  Check with toothpick to make sure it comes out clean. Cool.  Top with your favorite frosting.  Enjoy!

Well… what can i say? This cake is crazy good! It’s super moist & yummy. The texture is somewhere between a brownie & a cake. It’s not too sweet and the chocolate flavor is not overpowering. I frosted it with caramel cream cheese frosting and it’s perfect. I brought it to a friend’s house and everyone loved it. This recipe’s definitely a keeper!
