My baking experiment #69 – french madeleines

Recently i purchased a madeleines pan. I’ve always wanted to make these cute little French pastries (or cakes). My pan makes 5 at a time but this recipe makes 10, so i had to bake them in 2 batches.


  • 1 large egg
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • Pinch of salt
  • 1/2 cup flour
  • 4Β TbspΒ butter, melted


  1. Preheat oven to 375Β°F. Generously butter and flour pan for large madeleines (about 3×1 1/4 inches).
  2. Using electric mixer, beat egg and sugar in large bowl just to blend. Beat in vanilla and salt. Add flour; beat just until blended. Gradually add cooled melted butter in steady stream, beating just until blended.
  3. Spoon 1 tablespoon batter into each indentation in pan. Bake until puffed and brown, about 10-15 minutes. Cool 5 minutes. Gently remove from pan. Repeat process, buttering and flouring pan before each batch.
  4. Dust cookies with powdered sugar.

These little French cakes taste so good! The flavor is similar to, but somewhat lighter than a sponge cake. They’re crispy on the outside but soft on the inside. I’ve never had madeleines before so i hope i did them right!
