The Texas state fair starts next week. Besides Big Tex and the rides & games, the main attraction is the wide variety of fried foods. Today i decided to fry up a batch of caramel-filled zeppole.
- 1 cup water
- 2 Tbsp sugar
- 1/2 tsp salt
- 2 Tbsp oil
- 1 cup flour
- milk duds
In a small saucepan over medium heat, combine water, sugar, salt and oil. Bring to a boil and immediately remove from heat. Stir in flour. Continue stirring until mixture forms a ball. Heat oil for frying in deep skillet to 375°F.
Scoop a tablespoon of dough, stick a milk dud in it and roll into a ball. I managed to make 12 balls. Carefully drop balls into hot oil, frying in batches. Turn zeppole once or twice, cooking until golden and puffed up, about 5 minutes. Drain on paper towels. Dust with powdered sugar and serve immediately.
These zeppole are so good! Crispy & crunchy on the outside, oozing with caramel inside. Tastes just like something you’d get at the fair! Has this been done before? If not, i should start my own fried zeppole stand at the fair! 🙂
