funnel cake

I’m going to the state fair of Texas next week. Super excited since i haven’t been in 5 years. The last time i went was when my husband and i first started dating. We had a lovely time there and it holds a special place in my heart.
I love the fair. So much to see, so much to do. But the best part of course is the huge variety of fried foods. Can’t-miss foods include: corney dog, turkey leg, and my favorite funnel cake.
Since the fair is still a few days away and i can’t wait, today i decided to fry a funnel cake just to get started:
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 2 Tbsp sugar
  • 1/2 cup milk
  • 1/2 tsp vanilla
  • oil for frying
  1. Whisk together flour, baking powder and salt. Beat egg, sugar, milk and vanilla until foamy and well combined.
  2. Add flour mixture and mix to smooth, thick batter. Place in piping bag.
  3. Heat oil to 350 F. Pipe batter in long lines and fry until golden, about 30-60 seconds per side.
  4. Drain on paper towel and serve with powdered sugar while still hot.

OMG!! This funnel cake is sooooo good! Fresh & crisp right out of the fryer, tastes just like those at the fair!! Since i’m a chocoholic, i drizzled mine with chocolate sauce. Yummy. I’m thinking either whipped cream or ice cream would take it over the top. This is the best funnel cake i ever had! 🙂
