Yesterday i made a chocolate mug cake and it turned out really great. Today i decided to make a cookie version:
- 2 tsp butter spread
- 1 tsp brown sugar
- 3 drops vanilla extract
- 1/8 tsp baking powder
- 1 Tbsp milk
- 2 tsp cocoa powder
- 1 Tbsp flour
- 1 tsp chocolate chips
- 1 tsp peanut butter, optional
- Place butter in 8-ounce coffee mug or ramekin and melt in microwave. Stir in sugar, vanilla, and baking powder. Stir in milk, cocoa, and flour. Stir in chocolate chips. Place peanut butter in center and press down slightly into batter.
- Heat in microwave 30 seconds. Let cool slightly and enjoy with ice-cream!
Well, the cookie tastes great. I mean, what can go wrong with the wonderful combination of chocolate & peanut butter? But the texture is not really a cookie; it’s more cake-like. It’s light & spongy like a cake, not chewy or crispy like a cookie. So technically this is a mug cake, not cookie. In any case, it tastes yummy so i have no complaints!
