Preheat oven 400 F. Lightly grease 6 muffin cups.
In bowl, whisk flour, baking powder, and salt. In another bowl, whisk egg, milk, juice, sugar, and oil.
Make a well in flour mixture; pour in egg mixture. Stir until ingredients are just combined.
Spoon 1/4 cup batter into each muffin cup. Top with preserves and swirl with knife.
Bake 18-20 minutes. Cool pan on wire rack 5 minutes.
Remove muffins from pan; cool completely on wire rack. Enjoy!
These muffins are yummy! Flavored with the strawberry preserves, they have a light orange taste due to the orange juice. Their texture is soft & moist. They are not to heavy, perfect breakfast with some milk or coffee!
