It’s a warm & sunny beautiful fall day today. My husband made some butternut squash soup for lunch, so i’m baking some ham & cheese muffins to go with the yummy soup:
- 1 cup flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp onion powder
- 1/2 cup milk
- 2 Tbsp yogurt
- 2 oz cheese, grated
- 2 oz ham, diced
- Preheat oven to 350°F. Spray muffin pan with cooking spray.
- In a medium bowl, mix together flour, baking powder, salt and onion powder. Add milk and yogurt and mix until combined. Stir in cheese and ham. Divide batter into 6 muffin cups. Bake 15-20 minutes until golden.
These savory muffins are super yummy, full of cheesy flavor. Goes great with the butternut squash soup, or any soup for that matter. I’m thinking it would also be a great side-dish for thanksgiving dinner! Now i’m gonna enjoy this gorgeous weather! 🙂
