My baking experiment #96 – lemon yogurt drops

Every year around this time i say to myself: time flies!! Can’t believe it’s December already, and another year is almost over.

These past couple weeks the weather’s been pretty grey & dreary, and i’ve been craving and baking up lots of chocolate. But today the sun came out, it’s beautiful and bright, and i’m leaning towards something lighter and fresher. So i decided to bake some lemon yogurt drops:


  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 egg
  • 1 cup yogurt
  • 1/3 cup oil
  • 2 Tbsp lemon juice
  • zest of one lemon


  1. In a large bowl, combine flour, sugar, salt, baking soda and baking powder. In another bowl, combine egg, yogurt, oil, lemon juice and zest. Stir into dry ingredients just until moistened.
  2. Pour into lightly greased mini muffin pan. Bake at 350° for 20-30 minutes. Cool slightly before removing from pan.

These lemon drops are so light & refreshing! They are super soft and tender with a burst of citrus flavor, they bring sunshine to my mouth. And because of the lemon & yogurt, i almost don’t feel guilty popping these little delightful bites into my mouth, one after the other! 😛
