Every year around this time i say to myself: time flies!! Can’t believe it’s December already, and another year is almost over.
These past couple weeks the weather’s been pretty grey & dreary, and i’ve been craving and baking up lots of chocolate. But today the sun came out, it’s beautiful and bright, and i’m leaning towards something lighter and fresher. So i decided to bake some lemon yogurt drops:
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 egg
- 1 cup yogurt
- 1/3 cup oil
- 2 Tbsp lemon juice
- zest of one lemon
- In a large bowl, combine flour, sugar, salt, baking soda and baking powder. In another bowl, combine egg, yogurt, oil, lemon juice and zest. Stir into dry ingredients just until moistened.
- Pour into lightly greased mini muffin pan. Bake at 350° for 20-30 minutes. Cool slightly before removing from pan.
These lemon drops are so light & refreshing! They are super soft and tender with a burst of citrus flavor, they bring sunshine to my mouth. And because of the lemon & yogurt, i almost don’t feel guilty popping these little delightful bites into my mouth, one after the other! 😛
