My baking experiment #103 – peanut butter brownie cookies

‘Tis the night before x’mas, and all through my tiny apartment, the smell of freshly-baked cookies made the both of us smile…

Since it’s x’mas eve, it’s mandatory to leave some cookies out for Santa. I’m not sure what his favorite cookies are, but you can’t go wrong with chocolate & peanut butter!

Ingredients: (dozen cookies)

  • 1 large egg, beaten
  • 1 cup peanut butter
  • 1/4 cup brown sugar, lightly packed
  • 1 tsp baking soda
  • 1/4 cup cocoa powder
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F. Line baking sheet with parchment.
  2. Put all ingredients in bowl and mix well. Scoop dough (1.5 Tbsp each) onto baking sheet.
  3. Gently press down on dough mounds with back of spoon to slightly flatten. Bake 8 to 10 minutes.

I know these cookies are for Santa but i couldn’t help myself and ate a couple. Boy are these cookies yummy! They are not too sweet, perfect balance of chocolate & peanut flavor. The texture is fudgy like brownies. They are perfect with a glass of milk. I’m sure Santa would approve!

The cookies & milk were placed with care, in hopes that Santa soon would be there.
