My baking experiment #107 – ham & cheese bites

Today is new year’s eve eve. Can’t believe the year is almost over! I’ve baked so much this year; just recently passed my 100th bake. My all-time highest number of bakes in a month is 14 (almost once every two days). For the final month of 2015, i plan to surpass that.

I’ve already baked 14 times this month, this will be my 15th. My husband made some pulled pork for dinner; he eats rice with it. I’m not a big fan of rice, so i decided to make some mini ham & cheese bites for myself:

Ingredients:

  • 1 cup flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp onion powder
  • 1/2 cup milk
  • 2 TbspΒ yogurt
  • 2 oz cheese, grated
  • 2 oz ham, diced

Instructions:

  1. Preheat oven to 350Β°F. Spray mini muffin pan with cooking spray.
  2. In a medium bowl, mix together flour, baking powder, salt and onion powder. Add milk and yogurtΒ and mix until combined. Stir in cheese and ham. Divide batter into 12 mini muffin cups. Bake 10-15 minutes until golden.

These mini ham & cheese bites are so yummy! Full of cheesy flavor, they are really light & airy inside, almost like a cheese puff. They are perfect bite-sized snacks if you’re on the go, but also great with dinner or lunch or breakfast! πŸ™‚
