My baking experiment #109 – happy new year cupcakes

It’s new year’s eve!! The last day of 2015. My friend invited us to her place for new years eve party. Of course, i’m bringing dessert. Most people make champagne cupcakes for new years eve dessert, coz we toast the new year with champagne. But there’s gonna be lots of kids at this party so i decided on something more kid-friendly: pineapple!


1 box pineapple (or yellow) cake mix
1 can crushed pineapple

Preheat oven to 350 F. Line 2 cupcake pans with liners.

Beat together cake mix and crushed pineapple. Divide batter evenly among cupcake liners, filling each two-thirds full. Bake 18 to 22 minutes until golden and toothpick comes out clean. Remove and cool completely.

Once cooled, pipe Cool Whip onto each cupcake as desired. Cover and refrigerate 1-2 hours until chilled. Serve and enjoy!

These cupcakes are super yummy! They taste like pineapples & cream soda; great flavor! And their texture is so tender & moist. Is a very light cake, perfect for after a heavy new year’s eve feast! They happen to be champagne-colored too, so they’ll be perfect with your champagne toast as you count down to the new year!!
