My baking experiment #111 – small-batch shortbread

It’s a beautiful day today: the sun is shining, the sky is blue, there’s a chill in the air. It finally feels like winter. I’m warming myself up with a nice cup of tea and of course needed a little something sweet to enjoy. So i made a small batch of shortbread cookies.

Ingredients: 1/4 cup softened butter + 2 Tbsp sugar + 1/4 tsp vanilla + 1/2 cup flour + sprinkles (makes about 6 cookies)

Preheat oven to 325 °F. In a bowl, churn butter with hand mixer until white. Add sugar and vanilla and continue mixing 5 minutes until smooth. Add in flour and mix until well combined. Shape dough into small 1-Tbsp balls and place on baking sheet lined with parchment. Leave space between each and flatten gently with palm of hand. Decorate with sprinkles and bake 12 to 18 minutes until edges just start to brown. Let cool 5 minutes and transfer to wire rack to cool completely.

These cookies are so yummy! They smell amazing from the oven and are crumbly and melt in your mouth with a great buttery flavor. They taste like those Danish butter cookies from the blue tin box! Perfect with a hot cup of tea on a chilly afternoon! 🙂
