My baking experiment #117 – healthy chocolate banana bread

It’s such a gorgeous day today! The sun is shining brightly, the sky is a beautiful blue, and there’s a nice warm breeze blowing. It feels like spring in the middle of winter!

I love days like this. It makes me happy to be alive. And for such a wonderful day, i decided to bake something a little healthier to satisfy my incurable sweet tooth:

  • 1 banana
  • 3 Tbsp yogurt
  • 2 Tbsp honey
  • 1/2 tsp vanilla
  • 1 Tbsp peanut butter
  • 1 egg
  • 3/4 cup flour
  • 1/4 cup cocoa powder
  • 3/4 tsp baking soda
  • 1/4 cup chocolate chips

Preheat oven to 350º F. Spray loaf pan with cooking spray.
In blender, combine banana, yogurt, honey, vanilla, and peanut butter. Blend until smooth, 1-2 minutes. Add egg and blend.
Add flour, cocoa powder, and baking soda, blend until incorporated.
Mix in chocolate chips. Pour into pan. Sprinkle crushed pretzels on top.
Bake 25-30 minutes until done.

First of all, the smell wafting out of the oven is unbelievable. The bread itself is so yummy: the chocolate flavor really came through with a hint of banana, not too sweet, perfectly balanced with the slight saltiness from the pretzels. The texture is amazing: crunchy on the outside, super moist & tender inside.

This bread is so easy to whip up, everything done in a blender! My husband thought i was making a smoothie, not baking a banana bread! And with no butter, oil or sugar (substituted with healthier alternatives like banana, yogurt & honey), I don’t feel too bad devouring 2 or 3 (or 5) slices of this bread. I’ll definitely be making this more frequently in the future! 🙂
