My baking experiment #118 – mini chocolate chip cakes for two

I’ve been baking and eating lots of chocolate lately. Not that i’m complaining; after all, i’m an incurable chocoholic. There can never be too much chocolate. But for dessert tonight, i felt like having something other than chocolate. Something simple to whip up just for the two of us.


1 Tbsp butter, melted
2 Tbsp yogurt
3 Tbsp brown sugar
½ tsp vanilla
½ egg, beaten
¼ tsp salt
⅛ tsp baking soda
½ cup flour
¼ cup chocolate chips


In a bowl combine butter, yogurt, and sugar. Mix in egg and vanilla. Add flour, salt, and baking soda, stirring until combined. Fold in chocolate chips.
Divide batter evenly into 2 lightly greased ramekins.
Bake at 350 F for 15 minutes until edges are set and golden brown.

These mini cakes came together in no time at all: 5 minutes to prepare and 15 minutes to bake, we have 2 single-serving cakes in 20 minutes. They taste great too: mild vanilla flavor with hints of chocolate, not too sweet. The texture is soft & tender, almost like a muffin (honestly i can’t tell the difference between the two). These are great for a simple and quick dessert or snack! 🙂
