Today i suddenly had a hankering for some fresh-made beignets: those soft, pillowy pieces of fried dough. But i didn’t wanna bother with yeast or kneading dough. So i whipped up a batch of quick & easy beignets.
- 1/2 cup milk
- 1 egg yolk
- 1 cup flour
- 3/4 Tbsp baking powder
- 1/4 tsp salt
- 2 Tbsp butter, melted
- In small bowl, whisk together milk and egg yolk.
- In another bowl, whisk together flour, baking powder and salt. Stir wet into dry ingredients, then stir in melted butter, mixing until soft dough forms.
- Drop 1-Tbsp scoops of dough into 350ºF oil, careful not to overcrowd pan. Fry for 2 minutes until golden brown. Transfer onto paper towel-lined plate.
- Dust with powdered sugar and serve immediately.
These beignets are so yummy! Light & pillowy, almost like biting into a cloud. They are nice & crispy on the outside, soft & tender inside. They are so quick & easy to whip up; no messing with yeast or kneading dough or waiting to proof necessary. Just mix & fry, and we have freshly made beignets in 20 minutes! Perfect with some cafe au lait! 🙂
