Today is valentines day! We went out last night with some friends for v-day dinner. I had the most decadent whiskey cake; it was amazing. We decided to stay in today and chill out, just the two of us. He’s gonna make us dinner and of course i’ll make dessert.
Couple days ago i made his favorite dessert, chocolate lava cake. For tonight i’ll make my favorite dessert, chocolate cheesecake!
- Pretzel Crust
- 1/2 cup pretzel crumbs
- 1 Tbsp melted butter
- Hot Chocolate Filling
- 4 oz cool whip, thawed
- 4 oz cream cheese, softened
- 4 Tbsp hot cocoa mix
- 1 tsp vanilla extract
- Line 4 muffin cups with liners. Mix crumbs and butter and press into bottom of liners.
- Using electric mixer, beat cream cheese and vanilla until smooth. Mix in cool whip. Beat in cocoa mix until completely blended. Spoon filling into muffin cups. Garnish as desired.
- Freeze at least 4 hours. Let thaw a little before serving.
These mini cheesecakes are so creamy and taste like frozen hot chocolate! So delectable! Perfect sweet ending to a sweet day. Happy valentines, y’all! 🙂
