Hot cocoa cheesecake bites

Today is valentines day! We went out last night with some friends for v-day dinner. I had the most decadent whiskey cake; it was amazing. We decided to stay in today and chill out, just the two of us. He’s gonna make us dinner and of course i’ll make dessert.

Couple days ago i made his favorite dessert, chocolate lava cake. For tonight i’ll make my favorite dessert, chocolate cheesecake!

INGREDIENTS
    • Pretzel Crust
    • 1/2 cup pretzel crumbs
    • 1 Tbsp melted butter
    • Hot Chocolate Filling
    • 4 oz cool whip, thawed
    • 4 oz cream cheese, softened
    • 4 Tbsp hot cocoa mix
    • 1 tsp vanilla extract
  • INSTRUCTIONS
    1. Line 4 muffin cups with liners. Mix crumbs and butter and press into bottom of liners.
    2. Using electric mixer, beat cream cheese and vanilla until smooth. Mix in cool whip. Beat in cocoa mix until completely blended. Spoon filling into muffin cups. Garnish as desired.
    3. Freeze at least 4 hours. Let thaw a little before serving.

These mini cheesecakes are so creamy and taste like frozen hot chocolate! So delectable! Perfect sweet ending to a sweet day. Happy valentines, y’all! 🙂
