My baking experiment #124 – mini blender muffins

I had an overripe banana sitting on my kitchen counter and decided to bake a small batch of chocolate banana mini muffins.

INGREDIENTS:

1 ripe banana, peeled
1 large egg
1/2 cup peanut butter
2 Tbsp honey
2 Tbsp cocoa powder
1 tsp vanilla extract
1/4 tsp baking soda

DIRECTIONS:

  1. Preheat oven to 400F. Lightly grease 12 cavities of mini muffin pan.
  2. Add all ingredients to blender and blend on high until smooth and creamy.
  3. Fill each cavity 3/4 full with batter. Bake 8 to 10 minutes until tops are set.

How easy was that?! These muffins whipped up in no time and with minimal effort. Within 15 minutes from start to finish, I had a batch of freshly-baked muffins sitting on my counter ready to be devoured.

 

These muffins are really soft & fluffy with a light chocolatey taste. They smelled amazing too. And since they are bite-sized, i devoured a few in no time at all. But i don’t feel bad eating them because they contain no flour, butter or sugar. Kinda healthy, yes?! 🙂
