My baking experiment #131 – mini mocha cake

We didn’t get much of a winter this year; the weather has been mild all season long. Almost felt like a really long fall, then the leaves are sprouting again and the flowers are starting to bloom. It appears spring has sprung!

Today i’m making a simple single-serving chocolate cake with coffee frosting, everything mixed in a bowl, no muss no fuss:

3 Tbsp flour
2 Tbsp sugar
1 Tbsp cocoa powder
1/4 tsp baking soda
pinch salt
3 Tbsp milk
1 Tbsp oil
1/2 tsp vanilla extract

Frosting: 1/4 cup heavy cream, 1 Tbsp instant coffee powder


Preheat oven to 350 F. Spray ramekin with cooking spray.

In a bowl, whisk together dry ingredients. Whisk in milk, oil and vanilla until just combined. Pour into ramekin. Bake for 10-12 minutes.

While cake is cooling, make frosting by whipping cream & coffee with electric mixer until stiff peaks. Frost cake as desired.

This mini cake is super soft, fluffy & absolutely decadent. The coffee frosting with the chocolate cake combined tastes just like a mocha. The best thing about this cake? It comes together in less than 5 minutes and bakes in 10. The hardest part is waiting for the cake to cool before frosting. I was a little impatient and frosted the cake while it was still warm, and the frosting kinda melted off the cake. Still tasted absolutely yummy! 🙂
