simple lemon curd

It’s been raining these past couple days and will continue to rain this whole week. They say “April showers bring May flowers”, but since spring has commenced early this year, i guess it’s “March showers bring April flowers”?

Today i decided to make something fresh & citrus-y to brighten up the otherwise dreary day:


1/3 cup sugar
1 egg
1/3 cup lemon juice (1-2 lemons)
zest of 1 lemon
2.5 Tbsp butter, melted


1. In microwave-safe bowl, whisk together sugar and egg until smooth and thoroughly combined. Whisk in lemon juice, zest and butter.
2. Microwave on high in one-minute intervals, stirring after each minute, for about 2-3 minutes. Lemon curd is done when it coats the back of metal spoon.
3. Remove from microwave, push through fine-mesh sieve and pour into jar.
This lemon curd is so tasty: a little tart, a little sweet, a lot of bright lemony flavor! It’s so easy to whip up too. No need to get this at the grocery store anymore!
It’s very versatile: you can spread it on scones and muffins, top it on pound cake or cheesecake, fill it in cookies or cupcakes, stir it in yogurt, or simply eat it with a spoon! 🙂
