The first time i made french madeleines, they turned out pretty great, like small light sponge cakes. Today i’m trying out madeleines again with a slightly different recipe:
- 1 egg
- 1/4 cup sugar
- 1/2 tsp vanilla
- 2 Tbsp milk
- 2/3 cup flour
- 1/4 tsp baking powder
- 2 Tbsp butter, melted
- Beat egg with sugar, vanilla and 1 Tbsp milk until thick and light yellow. Add flour and baking powder bit by bit and continue mixing until smooth.
- Stir in remaining milk and melted butter.
- Lightly grease madeleine tray. Spoon 2 Tbsp batter into each mold.
- Bake 10-15 minutes at 375°F. Cool on a rack. Dust with powdered sugar.
These petites madeleines are fabulous: slightly crispy on the outside, soft & light inside. They are a little lighter than my previous batch, perhaps due to the added baking powder. They taste wonderful, not too sweet. Perfect with some lemon curd! 🙂
