My baking experiment #132 – les madeleines

The first time i made french madeleines, they turned out pretty great, like small light sponge cakes. Today i’m trying out madeleines again with a slightly different recipe:

Ingredients (makes 10)
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 2 Tbsp milk
  • 2/3 cup flour
  • 1/4 tsp baking powder
  • 2 Tbsp butter, melted
Instructions
  1. Beat egg with sugar, vanilla and 1 Tbsp milk until thick and light yellow. Add flour and baking powder bit by bit and continue mixing until smooth.
  2. Stir in remaining milk and melted butter.
  3. Lightly grease madeleine tray. Spoon 2 Tbsp batter into each mold.
  4. Bake 10-15 minutes at 375°F. Cool on a rack. Dust with powdered sugar.

These petites madeleines are fabulous: slightly crispy on the outside, soft & light inside. They are a little lighter than my previous batch, perhaps due to the added baking powder. They taste wonderful, not too sweet. Perfect with some lemon curd! 🙂
