Happy April! In the blink of an eye, the first 3 months of 2016 are over. Now it’s April, spring has sprung, the weather is warming up and the trees are turning green. I love springtime!
Since i’ve started working during the week, i now only have time to bake during the weekends. Today i made some mini chocolate chip muffins:
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar
- 3 Tbsp oil
- 1 large egg
- 1/3 cup milk
- 1/4 cup chocolate chips
In large bowl, mix all ingredients until combined. Lightly grease mini muffin pan. Scoop 1-Tbsp into each muffin cup and bake at 350 F for 10-12 minutes.
These mini muffins cannot be any easier to make! One bowl, no mixer required. And they’re quite tasty too! The good (or bad) thing is they’re bite-sized so i just kept popping them one after another into my mouth. 😛
