My baking experiment #136 – peanut butter brownies

I’m an incurable chocoholic. I love chocolate; i can eat chocolate all day long. Everything’s great with chocolate, and chocolate makes everything taste better. I’m particularly partial to the peanut butter-chocolate flavor combination. For some reason they just go together hand-in-hand. Like Reese’s peanut butter cups. Those things are addictive.

  • 1/4 cup butter
  • 2 Tbsp cocoa powder
  • 1/4 cup oil
  • 1/4 cup sugar
  • 1 large egg
  • 2 Tbsp milk
  • 1/2 tsp vanilla extract
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chocolateย chips

  • 1/4 cup butter
  • 1/4 cup milk
  • 2 Tbsp cocoa powder
  • 1/2 cup powdered sugar
  • 1/2 cup peanut butter

  1. Preheat oven to 400ยฐF. Line 8×8-inch baking dish with foil.
  2. For brownies: in small saucepan over medium high heat, combine butter, cocoa powder, and oil. Bring to boil while stirring constantly. Remove from heat.
  3. In large bowl, combine sugar, egg, milk and vanilla. Slowly stir in butter mixture. Add in flour, baking soda and salt. Stir until just combined. Fold in chocolate chips.
  4. Pour into baking dish and bake 20 minutes. Remove and place on wire rack.
  5. Forย frosting: in small saucepan, combine butter, milk, and cocoa powder. Whisk over medium high heat until mixture begins to boil. Remove from heat.
  6. In bowl, combine powdered sugar with butter mixture. Beat until smooth (several minutes). Pour over warm brownies.
  7. Melt peanut butter in microwave for 30 seconds. Pour over chocolate frosting and swirl in using knife.
  8. Refrigerate brownies for 2 hours (or overnight). Slice and enjoy. Store in airtight container in refrigerator.

These brownies are soooooo yummy! They are super fudgy with a rich chocolate flavor. The thick chocolate-peanut butter frosting just puts them way over the top! I used the crunchy kind so there were bits of peanuts on the brownies which gives them extra texture. These brownies are perfect on their own, even better with some ice-cream for an extra special treat! ๐Ÿ™‚
