My baking experiment #138 – chocolate chocolate cake

Happy Saturday! It’s such a gorgeous spring day today: the sun is shining brightly and the birds are chirping outside my window.

After a long exhausting week at work, today is the day i finally get to bake! Baking makes me happy, helps me destress & unwind. And of course the best part of baking is the eating afterwards!

Since my favorite cake is chocolate cake, i’m treating myself today with a chocolate chocolate-chip cake with chocolate glaze and chocolate sprinkles!!

Ingredients

  • 3/4 cup flour
  • 3 Tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 3 Tbsp oil
  • 1/2 cup brewed coffee
  • 1 tsp vanilla extract
  • 1 Tbsp white vinegar
  • 1/4 cup chocolate chips

Instructions

  • Preheat oven to 350 F. Lightly grease loaf pan.
  • Whisk together flour, cocoa, baking soda, salt and sugar. In measuring cup, mix together oil, coffee, vanilla and vinegar Pour into flour mixture and mix with rubber spatula until smooth. Fold in chocolate chips.
  • Pour batter into pan and bake 15-20 minutes until done. Glaze with simple chocolate glaze and chocolate sprinkles if desired.

This cake is super choco-licious! The cake itself is soft & moist, not overly sweet, and the chocolate chips give it an extra chocolate kick. If you prefer something a little sweeter i’d definitely go with the simple chocolate glaze (just combine powdered sugar with cocoa powder and mix with some milk until desired consistency).

The chocolate sprinkles gives it some crunch and well, cuteness! If you’re a chocoholic like me you’ll really enjoy this cake. So simple to make too, whips up in no time at all, no mixer necessary. Enjoy the weekend and happy baking, y’all! 🙂
