Happy Saturday! Wow, it seems i haven’t baked in a long time. Three weeks to be exact. I’ve just been really busy these past couple weeks. The weekends are always packed with things to do, errands to run, friends to hang out with. Over labor day weekend we drove down to Houston to visit the mother-in-law. So… no time to bake.
Well, this weekend before it gets really hectic with activities, i needed to do some baking. And since i’m craving chocolate (as always), i decided to go with fudge brownies:
4 Tbsp butter
4 Tbsp granulated sugar
1 Tbsp brown sugar
6 Tbsp cocoa powder, sifted
1/4 tsp vanilla extract
1 large egg
1/2 Tbsp corn syrup
1/3 cup flour
1/2 Tbsp cornstarch
1/4 cup chocolate chips
2 Tbsp heavy cream
To make brownies:
Preheat oven to 350°F. Line loaf pan with foil and spray with cooking spray.
Microwave butter for about 60 seconds until melted. Stir in sugars and cocoa powder.Let cool slightly before adding in vanilla, egg and corn syrup. Stir until very well combined. Add in flour, cornstarch and salt, and stir until just combined. Pour into pan and bake for 15 minutes. Let cool completely in pan.
To make frosting:
Microwave chocolate & cream on high for 30-60 seconds. Stir until smooth. Pour over cooled brownies and smooth evenly. Sprinkle with sprinkles. Refrigerate 1 to 2 hours until frosting is set. Remove from pan and cut into squares.
OMG these brownies are soooo yummy! Super fudgy with a rich chocolate flavor. With the chocolate frosting & chocolate sprinkles, it’s triple the chocolate goodness! Definitely for the chocoholic. I ate half the pan in one sitting!
