My baking experiment #157 – double chocolate mini muffins

Happy Sunday! Boy i’m really loving this beautiful fall weather… clear blue skies, crisp cool air… i could really get used to this!

As a huge chocoholic, i eat chocolate constantly, for breakfast, lunch, snack, dinner & dessert. Today i’m baking up a batch of Double chocolate mini muffins to satisfy my chocolate cravings!

INGREDIENTS

  • 1 cup flour
  • 3 Tbsp cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 3 Tbsp oil
  • 1 large egg
  • 1/3 cup milk
  • 3 Tbsp yogurt
  • 1/4 cup chocolate chips

Instructions

In large bowl, mix all ingredients until combined. Lightly grease mini muffin pan. Scoop Β 1-Tbsp into each muffin cup and bake at 350 F for 10-12 minutes.

See how easy these are? One bowl, no mixer required, easy clean-up, 20 minutes from start to finish… no excuses not to whip these babies up all the time!

And let me just tell you about the taste… ooh lala! Soft chocolate muffins with bits of chocolate throughout… They are little bites of heaven! I couldn’t stop popping these babies one by one into my mouth! πŸ˜›
