My baking experiment #161 – lemon snack cake

Happy Sunday! It’s November and daylight savings is over. The weather has turned considerably cooler this past week and there’s a chill in the air. It finally feels like fall!

Today the sky is gray & dreary. It’s the kind of day when you just wanna stay under the covers with a warm mug of coffee and read a good book by the fireplace. I wanted something fresh to brighten up the day, so i made a simple lemon snack cake:


  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 egg
  • 1/2 cup milk
  • 1/3 cup oil
  • 1/4 cup lemon juice (about 1 lemon)
  • zest of one lemon


  1. In a large bowl, combine flour, sugar, salt, baking soda and baking powder. In another bowl, combine egg, milk, oil, lemon juice and zest. Stir into dry ingredients just until moistened.
  2. Pour into lightly greased 7×7Β pan. Bake at 350Β° for 13-15 minutes. Cool slightlyΒ before removing from pan. Decorate with simple frosting if desired.

This cake is so yummy! It has a soft & tender crumb with a light lemon flavor. Perfect for breakfast with some coffee or afternoon snack with some tea. Any way you enjoy it, this simple lemon cake will definitely brighten up your day!
