My baking experiment #165 – peanut butter cookies

Happy Sunday! Brrr… the temps fell 50 degrees over a few hours yesterday. We started off feeling like summer in the 70’s and ended the evening feeling very much like winter in the 20’s. That’s Texas for ya. We can go through 3 seasons within a few hours! 😉

So the X’mas party last night was a hit, and the x’mas poke cake was super moist & yummy. Today i’m baking up two batches of cookies to bring my colleagues at work tomorrow. I’m starting out with some peanut butter cookies:

1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar 
1/4 cup peanut butter
1 large egg
1 tsp vanilla
1 3/4 cups flour
1 tsp baking soda
1/2 tsp salt
soft caramels & snickers bits
Preheat oven to 350°F. 
In a bowl with a mixer, beat butter, granulated sugar, brown sugar, and peanut butter. Then beat in egg and vanilla. 
In another bowl, combine flour, baking soda, and salt. Add to butter mixture and beat until well blended.
Form dough into 1-inch balls, then gently flatten with hand. Space cookies 2 inches apart on greased cookie sheet and bake 8 to 10 minutes until set or just beginning to brown. 
Remove from oven and immediately (and gently) press soft caramels or snickers bits into tops of cookies. Allow to cool 2 minutes on baking sheet then transfer to wire rack to cool completely. 
These cookies are so yummy! They’re slightly soft & chewy but gets crunchier as they sit for a bit. The caramels & snickers give them an added flavor. You can also use hershey’s kisses or other chocolate candy. So versatile, such tasty little cookies!
