My baking experiment #168 – raspberry cheesecake brownies

Happy Saturday!! OMG can’t believe it’s x’mas eve already! It’s just gonna be a quiet x’mas for my husband & me: we already celebrated with friends last weekend and we’re not visiting family this year.

I actually like this a lot. We get to enjoy each other’s company without all the hustle & bustle of traveling during the holidays which can be quite stressful. And i get to bake my favorite goodies and devour them all myself! 😛


  • For the brownie layer:

  • 1/4 cup butter, softened

  • 1/4 cup white sugar

  • 1 large egg

  • 1/2 tsp vanilla

  • 1/2 cup flour

  • 2 Tbsp cocoa powder

  • pinch salt

  • For the raspberry cheesecake layer:

  • 4 ounces cream cheese, softened

  • 6 Tbsp plain yogurt

  • 1 large egg

  • 2 Tbsp sugar

  • 1 Tbsp flour

  • 1 tsp vanilla

  • 1/2 cup raspberries, lightly mashed


  1. Preheat oven to 350 F. Line 9X5 inch loaf pan with parchment.
  2. With electric mixer, cream together butter and sugar until light and fluffy. Add egg and vanilla and whip until well combined. Add flour, cocoa and salt and mix until well combined. Spread brownie batter in pan, smoothing out into an even layer.
  3. Make cheesecake layer: with electric mixer, whip cream cheese, yogurt and egg until smooth. Add sugar, flour and vanilla and mix again until smooth and well combined. Fold in crushed raspberries. Spread cheesecake mixture on top of brownie batter.
  4. Bake 30 minutes until set, and edges are starting to brown. Place pan on wire rack to cool and then chill for 2-3 hours before lifting bar out and slicing into squares.

These cheesecake brownies are so yummy! The cheesecake layer is super creamy, almost flan-like. Complements perfectly with the fudgy brownie layer on the bottom. And the flavor combination of raspberries and chocolate… simply irresistible!

I’m gonna enjoy these brownies and some oreo truffles i also made today, plus those cookie cups i made yesterday. So much yummy treats to celebrate x’mas with!
