berry cheesecake pie

Happy Sunday! Today is game day and it’s an important game for Dallas: Cowboys vs Packers. My friend is hosting a watch party at his place to cheer on America’s team. There’s gonna be food and drinks and of course dessert.
I’ve had tons of yummy chocolate desserts over the holidays and so for today, i decided to go with something lighter and healthier: an easy, no-bake, berry cheesecake pie!
INGREDIENTS
Crust
  • 20 sandwich cookies
  • ¼ cup butter, melted
Filling
  • 8 oz cream cheese, softened
  • 8 oz cool whip, thawed
  • frozen berries
INSTRUCTIONS
  1. Finely crush cookies in food processor. Mix in melted butter until evenly combined. Press into bottom and sides of pie plate evenly and firmly. Chill for 30 minutes.
  2. Beat cream cheese with electric mixer until smooth. Mix in cool whip until evenly combined. Fold in frozen berries.
  3. Pour mixture into chilled crust. Cover and chill pie for at least 2 hours.

And that’s all there is to it! Since this pie is for a party i can’t cut into it just yet, but i did taste some of the leftover filling and it sure is yummy! Can’t wait to eat it!
