Happy Friday! I know it’s not the weekend and not my usual baking day. But i’m working from home today and it also happens to be National Chocolate Cake Day! So how can i not bake on the yummiest food day?!
Ya’ll know i’m a huge chocoholic and my favorite cake is chocolate cake. But since it’s the new year and my resolution is to eat a little healthier, i decided to go with a healthier chocolate cake, made without butter, oil or sugar:
- 3 bananas, ripe
- 1/2 cup yogurt
- 1/3 cup honey
- 1 tsp vanilla
- 1 egg
- 1 1/2 cups flour
- 1/3 cup cocoa powder
- 1 1/2 tsp baking soda
- 1/2 cup chocolate chips
- frosting of choice
- Preheat oven to 350º F. Spray 9-inch round pan with cooking spray.
- In blender, combine bananas, yogurt, honey, vanilla, and egg. Blend until smooth.
- Pour mixture into bowl. Add flour, cocoa, and baking soda, mix until incorporated.
- Add chocolate chips, mix. Pour batter into prepared pan. Bake 25-35 minutes.
- Frost as desired.
This chocolate cake is so yummy! It’s slightly fudgier and less fluffy than normal cakes. It’s texture is almost like a brownie, which is perfect for me. It is quite chocolatey with a slight taste of banana, with just enough sweetness but not too sweet.
I frosted mine with a simple chocolate ganache and a light dusting of powdered sugar. The effect is quite striking with the glossy ganache which also adds another layer of chocolatey goodness to the cake.
This is a wonderful cake to celebrate chocolate cake day! I’m gonna devour this cake soon enough! TGIF! Enjoy your weekend, and happy baking! 🙂
