My baking experiment #174 – Rolo-stuffed mini muffins

Happy Saturday! It’s April Fool’s day today; don’t get tricked by anyone! It’s such a gorgeous & sunny spring morning. The sun is shining brightly and the birds are chirping outside my window. I love mornings like this. And what better way to start the morning than with some fresh-baked mini-muffins?! πŸ™‚

INGREDIENTS

  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp sugar
  • 3 Tbsp oil
  • 1 large egg
  • 1/2 cup milk
  • 16 Rolo candies
  • melted butter & cinnamon sugar for topping (optional)

Instructions

In large bowl, mix all ingredients (except candy) until combined. Lightly grease mini-muffin pan. Divide batter evenly into each muffin cup (about 16) and stuff a Rolo candy into the batter in each cup. Bake at 350 F for 10-15 minutes. Brush with melted butter & dip in cinnamon sugar if desired.

 

These muffins are super soft & tender. They are not super sweet so if you prefer something a little sweeter go with the cinnamon-sugar topping. You won’t regret it! And the melty caramel filling gives it a little something extra. They’re like bite-sized molten lava cakes! You won’t be able to stop at one (or two)! πŸ˜‰
