Happy Saturday! It’s been such a long & exhausting week at work; I’m so glad the weekend is finally here. But it’s a hectic weekend full of errands to run and stuff to attend to, all crammed into 2 short days. Why can’t we have a 2-day workweek and a 5-day weekend instead?! 😉
Our friend is throwing a housewarming this evening at her new house. Everyone is bringing a dish and of course i volunteered dessert. Being the huge chocoholic that i am, i baked an easy chocolate cake, but to amp up the flavor profile, i frosted it with a mocha buttercream to give it an extra kick!
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 large egg, lightly beaten
- 1/4 cup oil
- 1/2 cup milk
- 1/2 cup hot coffee
- Preheat oven to 350°. Grease 8×8-in baking pan. In bowl, whisk first six ingredients. Stir in egg, oil and milk. Add coffee; stir until combined.
- Pour batter into prepared pan. Bake 20-30 minutes until done. Cool before frosting.
Mocha Buttercream: In bowl, beat 1/2 cup (1 stick) softened butter until creamy. Beat in 2 cups confectioners sugar, 1/4 cup cocoa powder, 2 Tbsp instant coffee powder, 1 tsp vanilla extract and 2-4 Tbsp milk to achieve desired consistency. Frost as desired.
See how easy the chocolate cake is? One bowl, 5 minutes to whip up, no mess, no fuss, almost like using a cake mix. And it’s super yummy too. You’ll have to take my word for it or even better, whip one up yourself!
As for the mocha buttercream… Mmmmm. The coffee flavor is not overpowering so even if you’re not a coffee drinker you’ll enjoy the taste. The coffee enhances the flavor of the chocolate and they go together perfectly.
Being the huge chocoholic that i am, i poured chocolate fudge on top of the mocha buttercream for extra chocolatey flavor. You can also dust with more cocoa powder or top with whipped cream like a real mocha drink!
