My baking experiment #178 – lemon cupcakes

Happy  Saturday! OMG i haven’t baked in over a month! OK there’s a perfectly good reason for that. I was busy moving: between all the packing, moving, unpacking, and then fixing up the new house, plus a full time job on top of that, i practically have no time (or energy) for anything else.

But today i finally unpacked my baking supplies and decided to go ahead and start baking! And since it’s the first week of summer, i baked something representative of the season: lemon cupcakes!!

Ingredients:

  • 1/4 cup butter, softened
  • 1/4 cup sugar
  • 1 egg
  • 3/4 tsp vanilla extract
  • 3/4 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk
  • zest + juice of 1 lemon

Buttercream

  • 1/4 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 Tbsp milk
  • 1/2 tsp vanilla extract
  • 1 Tbsp orange marmalade

Instructions:

  1. Preheat oven to 350 F. Line 6-count muffin pan with liners.
  2. For cupcakes: Cream butter and sugar with electric mixer. Add egg and vanilla and beat until combined.
  3. In another bowl, combine flour, baking powder, and salt. Slowly add dry ingredients to wet in 3 additions, beating on low speed. Batter will be thick. Beat in milk, lemon zest, and lemon juice on low until just combined. Do not over-mix.
  4. Spoon batter evenly into 6 cupcake liners. Bake for 15-20 minutes. Remove from oven and let cool completely before frosting.
  5. For frosting: Beat butter with electric mixer for 2 minutes until creamy. Add remaining ingredients and beat for 2 minutes. Add more powdered sugar if frosting is too thin or more milk if too thick. Frost cooled cupcakes as desired.

OMG… these are some of the best cupcakes i’ve ever had, if i may say so myself! The lemon flavor really comes through with each and every bite. They are not too sweet, balanced perfectly with the tartness of the lemons.

The buttercream is smooth and creamy, not thick or gloopy (if you know what i mean). I haven’t unpacked my piping bags (ok, i couldn’t find them) so i just spread them on with a butter knife. Hey, as long as they taste good (and they do!)

I devoured three of them right away. My husband had one and he approved (keep in mind he’s not a big dessert eater). I’ll save the rest for later (or maybe not…)

These bright citrusy cupcakes really brightened up this rainy Saturday morning. And baking definitely helped! I love baking… makes everything better 😀
