Happy Thursday! OMG can’t believe i haven’t baked in 3 weeks! Having a new house is really quite exhausting; there are always little things to do. And since it’s much larger than our apartment, cleaning takes up more time too. So every weekend we’re working around the house, not much time for anything else.
The other day i finished an entire tub of ice-cream for dinner. It’s my all-time favorite flavor: Dark Chocolate Caramel Espresso ice-cream by Turkey Hill. It’s an espresso ice-cream with dark chocolate caramel truffles and a sea-salt caramel swirl. It’s the perfect blend of coffee, chocolate & caramel: triple flavors melding into an unbelievable harmony in your mouth when you bite into the smooth, creamy ice-cream… Also the textural contrast is awesome: smooth ice-cream with crunchy truffles… perfection in every bite!
So today i wanted to re-create the textures of the ice-cream in my dessert: i made a smooth no-bake cheesecake with studded with crunchy cheerios and swirled with chocolate syrup:
- 10 Oreo cookies, crushed
- 2 Tbsp butter, melted
- 8 oz cream cheese, softened
- 8 oz cool whip, thawed
- 1/4 cup cheerios
- 2 Tbsp chocolate syrup
- Line 7×7-inch pan with foil.
- Mix crushed cookies with melted butter. Press into bottom of pan.
- Beat cream cheese until smooth. Fold in cool whip and cherrios until combined. Pour batter into pan and spread evenly.
- Drizzle chocolate syrup onto batter and swirl with knife.
- Chill in fridge for couple hours until cheesecake has set. Cut into bars and enjoy!
This cheesecake definitely hit the right spot texture & flavor-wise! The cheesecake is super creamy, and the cheerios gives it a nice crunch when you take a bite. And of course everything tastes better with chocolate! The chocolate syrup brings the flavor to another lever. Such a wonderful dessert, so simple to make!
