My baking experiment #181 – Snickers cookie cups

Happy Saturday! It’s been a crazy week. Came home Wednesday evening to find that my fridge/freezer had died. Most of the food had gone bad and had to be thrown out. What upset me the most was finding my 5 cartons of ice-cream in the freezer had turned into giant milkshakes. I attempted to drink all of it but my stomach has limited capacity.

Got the repair guy to come fix it on Friday. So at least now we have a working fridge, but no ice-cream! Need to go re-stock ASAP! In the meantime, i baked a batch of cookies to tide over my sugar craving…

  • 1/2 cup oil
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 24 Snickers baking bits
  1. Preheat oven to 375Β°. Lightly grease mini muffin pan.
  2. In a bowl stir together oil, both sugars, egg and vanilla. Add in flour, baking soda and salt to mixture and stir until just combined.
  3. Divide dough between mini muffin cups. Bake for 8-10 minutes.
  4. Press baking bits into cookies. Let cool then remove & enjoy!

These cookie cups are yummy! The cookies are crispy on the outside, chewy on the inside, not too sweet. The Snickers have slightly melted into the cookies and the combination of peanuts/chocolate/caramel gives the cookies an extra flavor boost!
