Happy Hump Day! It’s been an extremely exhausting & crazy busy week. I’m glad it’s mid-week and we’re over the hump. I really needed something sweet to get me through the remainder of the week, but have no energy to make something elaborate.
I’ve made a wacky/crazy (no eggs/milk/butter) cake before, and it was super simple to whip up and super tasty as well. I just needed something small to tide me over so i cut down the recipe and made them into cupcakes: crazy cupcakes for a crazy week!
- 3/4 cup flour
- 1.5 Tbsp cocoa
- 1/4 cup sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp white vinegar
- 1/2 tsp vanilla extract
- 2.5 Tbsp vegetable oil
- 1/2 cup water
Preheat oven to 350 F. Line 4 cups of muffin tin with liners.
Mix dry ingredients in bowl. Make 3 depressions and pour first 3 wet ingredients into each. Pour water over all. Mix well until smooth. Fill each liner 3/4 full with batter.
Bake 10-15 minutes until done. When cooled, top with frosting as desired.
Super fast and easy to whip up 4 yummy cupcakes to satisfy my sweet tooth! I frosted mine with some melted chocolate, super simple as well.
The cupcakes are soft & moist with a light chocolate flavor. The chocolate frosting gives them an extra hit of chocolate but not overpowering.
Well, i guess i’ll make it to the end of the week after all!
