Happy Saturday!! I say this every year and i’ll say it again: can’t believe the year is almost over! Thanksgiving is coming up next week, then x’mas, then before we know it the new year is upon us. Where did time go?
My husband’s birthday is coming up next week as well, and this evening we’re going out with some friends to celebrate. As usual i bake him a birthday cake every year, and since his favorite is chocolate, this year i’m making it simple with an easy (but fudgy) chocolate cake with Nutella buttercream:
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup cocoa powder
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup oil
- 1 large egg
- 1 Tbsp vanilla extract
- 3/4 cup milk
- 3/4 cup hot coffee
Preheat oven to 350º F. Lightly grease 8-inch round cake pan .
Whisk flour, sugar, cocoa powder, baking powder and salt thoroughly in bowl.
Add oil, egg, vanilla and milk to flour mixture and whisk well to combine.
Pour in hot coffee and mix until glossy. Pour batter into prepared pan.
Bake 30 – 40 minutes until done. Cool completely before frosting.
To make Nutella buttercream, combine 1/4 cup softened butter with 1/4 cup powdered sugar and 2 Tbsp Nutella. Beat with electric mixer until smooth & creamy. Put into piping bag and pipe onto cooled cake, or just slather it on however you desire!
This chocolate cake is chocolatey and fudgy, like a cross between a cake & a chocolate brownie. If you prefer a more cakey cake, add 1/4 tsp more baking powder in your mixture. But i personally prefer fudgy cakes so this is it!
The Nutella buttercream has a light Nutella flavor, not overpowering. If you prefer a stronger Nutella presence, add a couple more Tbsp more Nutella in your buttercream. For me, this light hazelnut flavor perfectly complements the chocolate in the cake.
