My baking experiment #186 – peppermint chocolate cupcakes

Happy New Year’s Eve!! OMG, today is the last day of 2017. Where has time gone?

Sad to say, I haven’t done much baking at all this year, especially towards the end of the year. Work, an insane amount of work, caught up with me and I have absolutely no time for baking or other hobbies. This has got to change. I need to bake more!!

Well, as it’s NYE and we’re invited to a friend’s place for NYE party, i of course am bringing dessert. What better way to send the year off than with some yummy peppermint chocolate cupcakes?!


  • 1 1/2 cups flour
  • 3 Tbsp cocoa
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp  salt
  • 1/4 cup crushed candy cane


  • 1 tsp white vinegar
  • 1 tsp vanilla extract
  • 5 Tbsp vegetable oil
  • 1 cup water (or coffee)


Preheat oven to 350 F. Line muffin tin with liners.
Mix dry ingredients in large bowl. Make 3 depressions. Pour vinegar, vanilla and oil separately in each depression. Pour water (or coffee) over all. Mix well until smooth.
Fill each liner 3/4 full with batter. Bake 15-20 minutes until done. Let cool completely and frost with peppermint frosting.
Well folks, this is my last bake of the year. Hopefully next year i’ll have more time for baking more yummy desserts!
